Reese’s Protein Balls

I’ve been slacking on the recipes these past couple of months so here is one I discovered that turned out DELICIOUS!  I found this recipe from Shape.com and modified it slightly.  You can find the original receipt here.  The recipe said to make 2 batches because you’ll eat the first batch within 5 minutes and boy were they right!  I luckily had a little self control because I needed to take a few pictures first and did not have enough ingredients to make a second batch, but you can bet that after I write this post, these will be gone within the day. 🙂

Ingredients:
1 cup medjool dates (I used 10)
1 scoop Vanilla Unico Nutrition Protein Powder (code “LAURA” for 15% off + free shipping over $50)
1/2 cup natural peanut butter
1/4-1/2 cup unsweetened apple sauce
Chocolate chips

Directions:
Blend dates, protein powder, peanut butter and apple sauce in high powered blender or mixer.  I ended up having to add a little ore apple sauce (1/2 cup total) to get it to blend well in my blender.  Scoop the dough out into a bowl and form into balls on a lined baking sheet.  Push chocolate chips into balls once formed.  Chill in refrigerator.  Keep stored in air tight container in fridge (if you even have any left over).  Makes approximately 20 balls.  Enjoy!
