Dark Chocolate Protein Bites

One thing I can’t live without is chocolate.  I love having a sweet snack before heading off to bed but I’ve had a hard time finding a dessert I like that’s also healthy.  (I LOVE Keep It Cleaner’s Radical Rocky Road; however, I wanted a treat that was a little higher in protein.)  After months of searching and testing various recipes, I’ve finally found one I’m obsessed with!  It’s super simple to make, doesn’t have many ingredients and can be made ahead of time and stored in the fridge or freezer.  I found the original recipe on BodyBuilding.com and tweaked it slightly to create these yummy, dark chocolate balls.

Ingredients:
3/4 cup vanilla or chocolate protein powder (I used PEScience Vanilla since that’s what I had on hand.  It was a little more than 2 scoops, about 68g.)
1/4 cup almond flour
1/4 cup cacao powder
2 1/2 tbsp maple syrup (or sweetener of choice)
4 tbsp unsweetened vanilla almond milk

Directions:
Heat coconut oil in microwave until melted.  Then, mix all ingredients together. Taste your batter to ensure it’s as sweet as you’d like and add a bit more sweetener if needed.  If it’s too wet, add a bit more almond flour.  Line baking sheet with wax paper, shape dough into 12 truffles and place truffles on wax paper.  Let truffles set for a few hours in the freezer or overnight in the fridge.

Tips & Tricks:
Roll the truffles in cacao powder, powdered sugar, coconut flakes, or any other topping you’d like before popping them in the freezer to set!
